Masaman Curry

INGREDIENTS 
  • 3 Chicken Breasts
  • 1 Yellow Onion 
  • 1 Cup of Diced Carrots
  • 1/4 Cup of Chopped Garlic 
  • 2 Tablespoons of Chopped Ginger
  • 1 Can of Masaman Curry Paste
  • 1 Can of Coconut Milk
  • 1 Can of Water
  • ½ Cup of Peanut Butter
  • 1/4 Cup of Soy Sauce
  • 2-4 Diced Potatoes
  • Rice (to serve over)

DIRECTIONS

  1. Brown the diced chicken and the yellow onion together.
  2. Add the the remaining ingredients (minus the potatoes).
  3. After 10-15 minutes, add the potatoes.
  4. Simmer for 15 minutes or until the potatoes are done.
  5. Serve over rice. 

NOTES
Optional: Serve cashews to each serving.
