INGREDIENTS
- 3 Chicken Breasts
- 1 Yellow Onion
- 1 Cup of Diced Carrots
- 1/4 Cup of Chopped Garlic
- 2 Tablespoons of Chopped Ginger
- 1 Can of Masaman Curry Paste
- 1 Can of Coconut Milk
- 1 Can of Water
- ½ Cup of Peanut Butter
- 1/4 Cup of Soy Sauce
- 2-4 Diced Potatoes
- Rice (to serve over)
DIRECTIONS
- Brown the diced chicken and the yellow onion together.
- Add the the remaining ingredients (minus the potatoes).
- After 10-15 minutes, add the potatoes.
- Simmer for 15 minutes or until the potatoes are done.
- Serve over rice.
Optional: Serve cashews to each serving.
